It’s great that you have decided to make your first batch of wine, But you will find that the hardest part of the whole process is just waiting for it to stop bubbling! Actually putting all the ingredients together doesn’t take more than hour of your time for your first gallon, but then the first worries start.
Have I put enough yeast in? How long will it take before it starts bubbling? Should I add some yeast nutrient now just in case? All these things run through the mind of the first-timer.
Don’t worry though, it is exactly the same for every single newbie. It’s just a phase we all have to go through. We ALL put the demijohn in the hottest part of the house to try and speed it up a little bit, and always add too much nutrient, even though all the books and experts will tell you that it doesn’t make any difference in the end.
Then we sneak in for a look every day to see how much it is bubbling. First we get really excited when it starts its first vigorous burst of alcohol producing, then after a couple of weeks we can’t wait for it to start slowing down as we are dying to find out how it eventually turns out.
As it slows and slows, we keep thinking; “Shall I stop it now?” ; “Should I rack it?”; Shall I just get a siphon and have a little taste?”
And we do! It never tastes as good before you have even racked it, but that has never stopped us, and usually we will find that over half the gallon has gone before it has even had two weeks to mature slightly.
