Super Simple (and cheap) Wine Making: I’ve been brewing for years. I started out with a huge complicated kit and there are times when it’s necessary to break that out, but now that I have a good understanding of exactly what’s going on I’ve boiled the process down to streamline it.

To do this you will need

* 1 jug of sugar based fruit juice (or any liquid with a high amount of sugar)
* 1 packet of wine or champagne yeast
* 1 (maybe two) condoms… have an extra in case one breaks when you apply it.

How to brew honey mead, short and sweet.

Honey Mead
** 15 lbs of honey in 5 gallon batch makes good sweet but 20 lbs of honey is like cotton candy. I like to use the pasteurized processed clover honey from Sam’s Wholesale club or Wal-Mart. I’ve tried different honey with varying result. The honey makes a dramatic difference in the body and flavor of your mead. Pasteurized and processed honey negates the need for campden tablets as long as you’re not putting in anything else that may be contaminated with bacteria. Use good filtered water too. It really makes a difference. I use a Britta filter.

Waiting for Your First Home Made Wine to Brew is the Hardest Part 0

It’s great that you have decided to make your first batch of wine, But you will find that the hardest part of the whole process is just waiting for it to stop bubbling! Actually putting all the ingredients together doesn’t take more than hour of your time for your first gallon, but then the first worries start.
Have I put enough yeast in? How long will it take before it starts bubbling? Should I add some yeast nutrient now just in case? All these things run through the mind of the first-timer.
Don’t worry though, it is exactly the same for every single newbie. It’s just a phase we all have to go through. We ALL put the demijohn in the hottest part of the house to try and speed it up a little bit, and always add too much nutrient, even though all the books and experts will tell you that it doesn’t make any difference in the end.
Then we sneak in for a look every day to see how much it is bubbling. First we get really excited when it starts its first vigorous burst of alcohol producing, then after a couple of weeks we can’t wait for it to start slowing down as we are dying to find out how it eventually turns out.
As it slows and slows, we keep thinking; “Shall I stop it now?” ; “Should I rack it?”; Shall I just get a siphon and have a little taste?”
And we do! It never tastes as good before you have even racked it, but that has never stopped us, and usually we will find that over half the gallon has gone before it has even had two weeks to mature slightly.
